David Coffaro Vineyard and Winery Winemaker's Diary

Weeks 13 - 14
April 9, 2006 to April 22, 2006

  Thursday April 20, 2006

We finally have great weather. It has been into the low 70's the past few days and we may have good weather for the next several days. That brings a lot of work to do including the chopping of grass and spraying of vines to stop any mildew. I also must get all my labels ready for printing. I must get back to work.

Saturday April 22, 2006

I'm so proud of myself. I finished designing all the 2005 labels and sending them to the label printer and for approval to the TTB, the government. I did forget to put the barcodes on the labels, but I am not sure I want to. We had to put little barcodes on all our wine sold at Plaza Farms, but we are no longer there. Also we had to put them on our bottles sold to a grocery chain in the Central Valley. The last I heard the chain had not sold much wine. Recently we have sold wine to a distributor in Oregon as well as one in Maryland. Neither distributor asked about barcodes. SO do I want to have the printer put ugly barcodes on my labels if I don't need them? AND where would I put them. Steve will be here in a short while and I will ask him how small the code could be and then make a final decision.

Our Velcorin dispenser has arrived and today we will get instructions on how to use it. As I said in a previous diary entry in January Velcorin has been used in fruit juices for 20 years and has recently been used in wine. It will make sure that yeast cells are diminished and there will be little chance of Malolactic occurring in bottle or a refermentation in our Late Harvest Sauv Blanc. It will also help in controlling Brettanomyces. I do not want to filter our wines so this will be a good thing. Next Tuesday we plan on bottling our 2005 Chardonnay, 2005 Fresco and our 2005 Late Harvest Sauv Blanc.
