We had about 1500 people here on the weekend
to enjoy the Passport to Dry Creek Valley event. Our sales were a little
better than last year so we are happy. We had a great time on every
night with friends and relatives bringing many bottles from other
wineries to try. I even got out to go to wineries I had not visited
before. I am real tired but life goes on.
Below is some more info on barrels from a person I respect. Like I said we will be trying some 4 year aged barrels.
"When you air dry wood here is what happens:
1/obviously the moisture goes away 2/polysaccharides in the wood are released 3/bitter phenolics are neutralized
4/little
micropores are created...the longer the wood is seasoned, the
more...this means every time you put another WINE INTO THE BARREL, the
wine finds more pores, more flavors"
